Protein-packed power balls

Dalton is routinely fighting wild fires in the fall and I’m constantly craving sweets when the weather starts cooling down, so we needed to find something that was still healthy, a little filling, and gave us the little boost we need! I searched for recipes on Pinterest (as we all do) and couldn’t find anything just right, so into the kitchen I went to experiment. After some minor trial and error, I developed this recipe and it’s so simple and delicious! 

Ingredients

  • 2/3 C peanut butter, lightly heated until runny
  • 1/3 C liquid honey 
  • 1 2/3 C old-fashioned rolled oats
  • 1/4 tsp salt
  • vanilla extract
  • 1.5 scoops of protein powder of your choice
  • dark chocolate chips

Special notes: 

  • My favorite PB to use in this recipe is Jif Naturals Crunchy if I can’t make it myself!
  • Local honey is so healthy and great for allergies! We get ours from Hatfield Farm
  • We use Sweet Potato flavored protein powder, but I imagine this would be great with vanilla or pumpkin pie flavors as well!

Directions

  1. Melt the PB and mix it with the honey in a medium bowl
  2. Add protein powder and mix until blended well
  3. Add oats, salt, vanilla, and mix again until even
  4. Optionally add your chocolate chips (measured with the heart)
  5. Roll into 1-inch balls. Wet your hands with water to help the balls stick to themselves and not you. Set these on a plate or baking tray
  6. Put your rolled protein balls into the freezer for 30 minutes to set and then move them to the fridge or into a bag for storage! 

I am absolutely obsessed with these! I find that they taste best after refrigerating them for a day. The oats soften up a bit and the whole thing is a bit more creamy. I’ve used both mini morsels and normal-sized chocolate chips – I actually think I like the larger ones better!
